Ingredients for Mooli Dhokli
For the Dhokli Dough:
- 2 cups Wheat flour (गेहूं का आटा)
- 1 tbsp Carom seeds (अजवाइन)
- 1 tbsp Coriander powder (धनिया पाउडर)
- 1 tbsp Kashmiri red chili powder (कश्मीरी लाल मिर्च पाउडर)
- 1 tbsp Turmeric powder (हल्दी पाउडर)
- 1 tbsp Ginger-chili paste (अदरक मिर्च पेस्ट)
- 1 tbsp Lemon juice (नींबू का रस)
- 1 tsp Baking soda (सोडा)
- Salt as per taste (नमक स्वादानुसार)
- Oil & water as required (तेल और पानी)
For the Mooli Dhokli Gravy:
- 1 Radish with leaves, chopped (पत्तों वाली मूली)
- 1 cup Tomatoes, chopped (टमाटर)
- 1 tbsp Mustard seeds (सरसों के बीज)
- 1 tbsp Asafoetida (हींग)
- 3 Dry red chilies (सूखी लाल मिर्च)
- 1 tbsp Garlic paste (लहसुन पेस्ट)
- 1 tbsp Ginger-chili paste (अदरक मिर्च पेस्ट)
- 1 tbsp Coriander powder (धनिया पाउडर)
- 1 tbsp Kashmiri red chili powder (कश्मीरी लाल मिर्च पाउडर)
- 1 tbsp Turmeric powder (हल्दी पाउडर)
- Salt as per taste (नमक स्वादानुसार)
- Oil & water as required (तेल और पानी)
How to Make Mooli Dhokli?
Step 1: Prepare the Dhokli Dough
1️⃣ In a bowl, add wheat flour, ginger-chili paste, turmeric, coriander powder, chili powder, carom seeds, salt, baking soda, lemon juice, and oil.
2️⃣ Mix well and gradually add water to knead a soft, pliable dough.
3️⃣ Cover the dough and let it rest for 10 minutes.
4️⃣ After resting, take small portions and shape them into small dumplings (dhoklis).
Step 2: Prepare the Mooli Dhokli Gravy
1️⃣ Heat 4 tablespoons of oil in a pressure cooker on medium flame.
2️⃣ Once hot, add mustard seeds, carom seeds, dry red chilies, and asafoetida. Stir briefly.
3️⃣ Add chopped tomatoes and mix well. Then, add ginger-chili paste and garlic paste. Stir and cook until aromatic.
4️⃣ Add chopped radish (mooli) with its leaves and stir well.
5️⃣ Pour in ½ cup water, mix, and let cook for 5-10 minutes, covered (without the whistle).
6️⃣ After 10 minutes, remove the lid and mix everything well.
Step 3: Add Dhoklis & Simmer
1️⃣ Add the prepared dhokli dumplings one by one, stirring gently.
2️⃣ Sprinkle coriander powder, red chili powder, turmeric powder, and salt to taste. Mix well.
3️⃣ Pour 1 cup of water, stir, and cover the pressure cooker.
4️⃣ Cook on low to medium flame for 5-10 minutes.
5️⃣ After 10 minutes, turn off the flame, open the lid, and mix well.
