How to Make Palak Paratha
Step 1: Prepare Palak Puree
- Boil the spinach for 30 seconds in hot water.
- Immediately transfer it to cold water to retain its green color and stop the cooking process.
- In a blender, add boiled spinach, garlic, green chilies, ginger, cilantro, and cumin seeds.
- Blend everything into a smooth puree and set it aside.
Step 2: Make the Dough
- In a mixing bowl, combine whole wheat flour, carom seeds, sesame seeds, salt, curd, and palak puree.
- Gradually add water and knead it into a soft, pliable dough.
- Cover and let it rest for 10 minutes to enhance elasticity.
- After resting, apply a little oil and knead again for a smooth texture.
Step 3: Rolling the Paratha
- Divide the dough into equal-sized balls.
- Sprinkle some flour on a surface and roll out each dough ball into a round shape.
- Apply ghee on the rolled dough, sprinkle some dry flour, and fold it. Repeat this process for flaky layers.
- Roll it again into a round paratha.
Step 4: Cooking the Paratha
- Heat a tawa (griddle) on medium flame.
- Place the rolled paratha on the hot tawa and cook until light golden brown spots appear.
- Flip, apply ghee, and cook on both sides until golden brown and crispy.
- Once it puffs up and turns golden, remove from heat.
